Waffles and Awesome Sauce

Waffles and Awesome Sauce
Now that I've started with recipes from my Mennonite Treasury cookbook, I had to continue. Not only that, but I have been receiving requests for Waffles and Awesome Sauce for months now. Generally speaking, this is a treat that my kids get when Gramma is here visiting, because she knows how to make the sauce without consulting the recipe book. When we were visiting Gramma in October, my boys made sure that they got this favorite breakfast/lunch dish, and that Gramma gave me the recipe. Well, she didn't actually give me her recipe, but she did tell me that I could use the one in the Mennonite Treasury. I think she has a simpler way of doing it, and I'm going to ask her about that soon, and see if I can save myself a bit of trouble. If there's an easier way, I'll take it, because it will mean we can have this for lunch more often!

When I was growing up, it was a happy day every time my Grandma or my Mom made waffles for breakfast or lunch, because not only did we love waffles, but the sauce - oh how we loved the sauce! Not that we ever had a name for it - just "that really good sauce that you make for the waffles, Mom" or something along that line.

So... the name "Awesome Sauce" - that is the name my boys gave to the sauce, which isn't titled in the cookbook. I'd describe it as being like a thin custard, and it is delicious on waffles. It's how waffles should be served, in my opinion. And now that I have made it successfully by myself, I guess I am out of excuses and will have to make waffles regularly.

I followed pretty closely the recipe given in The Mennonite Treasury of Recipes, where it's titled "Good Waffles". Here is my version - hopefully explained a little more clearly!

Waffles and Awesome Sauce
3 cups flour
1-1/2 tsp salt
4-1/2 tsp baking powder
8 eggs
1/2 cup milk
1/2 cup heavy whipping cream
1-1/2 cups water
1/2 cup melted butter

Mix together the dry ingredients. Separate the eggs and beat the yolks well. Add to the remaining ingredients to the yolks and mix well, then add the egg mixture to the flour and beat well. Reserve 1/2 cup of this batter for the sauce. Beat the egg whites stiffly and add to the large batch of waffle batter. Bake in a waffle iron.

To make the Awesome Sauce, add the following to the 1/2 cup of reserved waffle batter:
1 tbsp flour
1 cup sugar
1/2 cup milk
1 tsp vanilla
Beat well. In a saucepan, bring one quart of milk just to a boil and gradually add the flour mixture. Bring back to a boil, stirring frequently, then set aside until the waffles are ready to serve.
