Do you know that I have not decorated for autumn at all this year?? Very unusual for me, because I just love harvest theme decorations. I have a box full of harvest wreaths, silk autumn leaves, cute scarecrows, and even some pumpkins, but haven't found the time motivation to get those out and display them. Maybe I'll put them out today so that we can enjoy them for a couple of weeks before it's time to decorate for Christmas.
I love pumpkin pie, as do my kids. I also love the pumpkin pie flavored cream cheese, which I spread on gingersnaps. Yummy!!!!!
But for something a little different, here's a pumpkin recipe that I really like, and don't make nearly often enough. Now that I've been reminded of it, I think I may bake this today!
Pumpkin Cheesecake
Crust:
1 1/2 cups graham crumbs
1/3 cup margarine, melted
1/4 cup sugar
Filling:
3 pkg (8 oz each) cream cheese, softened
1 cup sugar
1/4 cup brown sugar
2 eggs
1 3/4 cups pumpkin (solid pack)
2/3 cup evaporated milk
2 tbsp cornstarch
1 1/4 tsp cinnamon
1/2 tsp nutmeg
Topping:
2 cups sour cream - at room temperature
1/3 cup sugar
1 tsp vanilla
For Crust: Combine crumbs, butter and sugar. Press into bottom and up sides of a 9" springform. Bake at 350* for 6-8 minutes. Cool 10 minutes.
For Filling: Beat cream cheese and sugars till fluffy. Beat in eggs, pumpkin, and milk. Add cornstarch and spices, beat well. Pour into crust and bake at 350* for 55-60 minutes or until edge is set but center still moves slightly.
For Topping: Combine sour cream, sugar and vanilla in small bowl. Spread over surface of warm cheesecake. Bake at 350* for 5 minutes. Cool on wire rack. Chill several hours or overnight before removing sides of springform and serving.
Almost forgot to include a Scripture! This was in our reading this morning, and impressed me all over again:

I have a problem with the time/motivation factor. =/
Over here in England, we don't really do much decorating for Hallowe'en - it's getting more popular, but not the same as in the USA.

We didn't put up all our decorations this year, either. A few flowers on the mantle, a stuffed pumpkin on the dining room table. In years past we used to go all out...but sometimes simple is good, too. I enjoyed your recipe and verse this week. Julie

That sure sounds good. It sounds like a recipe for my daughter to try! She's (at 17) much more daring and excited about recipes than I am any more. I'll certainly show her this one....
